As a lover of Mexican food and culture, I’ve always wanted to own a Mexican restaurant, and teaming up with Paul Lyman made it possible. We are pleased to present Casco Antiguo y’ Callejon Cantina, an authentic Mexican restaurant and bar in the heart of Seattle’s Pioneer Square. We are focused on our food, but being able to mesh with the aesthetic of Pioneer Square and become a staple of this unique and diverse neighborhood is also important. Keeping and showing off the building’s original brick walls while finding and fabricating distinct, rustic finishes, compliments and harkens back to Pioneer Square’s roots as a cultural melting pot. Casco Antiguo y’ Callejon Cantina is divided up into two distinct sections, the Cocina and the Cantina. The lighter side, the Cocina, is welcoming to both adult and family diners alike. The Cantina is the darker, moodier cousin of the Cocina. With a speakeasy style back alley entrance, later hours, and a drink menu consisting of margaritas on tap, handcrafted cocktails, rotating draft beers, and a wide selection of mezcals and tequilas. Chef Rodolfo Riveron has created a diverse menu featuring his house-made salsas, handmade tortillas, tacos, and enchiladas that present his take on authentic, flavorful Mexican cuisine.
